Black bean and rice casserole – a dish that will be perfect for vegetarians. This time I tried a stew of ingredients that I can always find in my home. I think that everyone has come to a situation when you don’t have anything in the fridge, but still, want to make some dish. This dish is not just healthy but also has a lot of protein and carbs.
I will shortly tell you how I cooked this casserole. I cooked everything in a dish of glass and served in plates, but it would be more interesting and convenient to cook this dish in small dishes made of clay with covers. Heat oven to 220 degrees Celsius. Spray some olive oil in the baking dish.
Mix all ingredients and distribute in baking dish. Cook for 30 minutes.
Let it cool off and serve. You can pour some chopped greens.
