2 tabelspoons of Vegetable oil
2 teaspoons of Red curry paste
1 Onion
1 cup of Grated carrots
1kg of Butter pumpkin
1 Sweet potato
1 can of Coconut milk
1 cup of Water

Butter pumpkin and sweet potato soup: coconut, sweet, lightly spicy. Smooth, creamy texture, giving you warm – all you need in the winter time. Sweet potato (batata) lovers will really enjoy it.

Heat the oil in a big pot. Put the curry paste and stir for a couple of minutes. Put chopped onions and fry until it's soft. If the paste starts to boil, add some water. Add grated carrots, sweet potatoes, and pumpkin. Pour coconut milk and water, add some salt, stir and let it boil. After boiling, cover the pot and boil for 20-25minutes.

When the pumpkin and potatoes get soft blend everything in a blender. Serve soup in a bowl. Pour some coconut milk on top.
