- 8 tablespoons of Chia seeds
- 2 cups of Coconut milk drink
- 1/3 cup of Coconut yogurt
- 1 tablespoon of Agave syrup
- 1 teaspoons of Vanilla
- 1/2 teaspoon of Cinnamon
- pinch of Salt
- 1/2 Mango
- 2 tablespoons Coconut shavings
Quick chia pudding with coconut milk is always the best option for my breakfast when I do not have much time to cook. You can prepare seeds a day before, and quickly make your breakfast in the morning.
Pour chia seeds into a coconut milk drink(not that thick one from a can but coconut drink), cover the bowl with a towel and leave it in the fridge overnight. The shortest time for seeds to stay put is about 2 hours.
Mix seeds, add vanilla, salt, cinnamon and mix it again. To make it sweeter add a little bit of agave syrup.
Put coconut shavings in a frying pan and cook it a little bit. Mix a yogurt with agaves syrup, then cut a mango into cubes.
Place chia pudding in a glass, put some fried coconut shavings. Add chopped mango, yogurt and all the remaining coconut shavings on the top.
