- 1/2 cup of Black beans
- 1/2 cup of Quinoa
- 1 cup of Water
- 1/2 cup of Cherry tomatoes
- 3 Spring onions
- 3 tablespoons of Olive oil
- 1/2 Lime
- 1 tablespoon of grated Caraway
- pinch of Salt
- pinch of Pepper
- pinch of Chilli flakes
Quinoa and bean salad is a true vitamin bomb. Quinoa is one of the healthiest and most valuable cereal crops for us. It has not only perfect nutrition (full of vitamins, good fat, protein, carbs, amino acids, minerals) but also perfect taste. I don’t know why, but it tastes it reminds me of meat or buckwheat. Even though I found these groats not long ago, but I use them most of the cereal crops. Salad with this little miracle in our family is eaten instantly! I like that a bowl of salad substitutes me a good lunch and I don’t want anything more with these salads. So if someone thinks that satiated dinner without meat is impossible – definitely try!
Boil quinoa by the instruction on package or boil for 15 minutes. Take out the pot from the fire, mix and leave it to cool off.
In other dish mix olive oil, lime juice, caraway, salt, pepper and chili flakes.
In an empty bowl pour quinoa, boiled beans, tomatoes and chopped spring onions. On toping pour sauce that you made and mix everything. Decorate salad with greens.
