- 1 Red onion
- 140g of Red lenses
- 700ml of Vegetable stock
- 400g of Canned tomatoes
- 200g of Canned chickpeas
- spoon of minced Coriander
- for decoration Natural yoghurt
This time for dinner I will cook thick soup of chickpeas and red lenses, which resembles a stew with its thickness.
Heat chili flakes and cumin seeds in a large pot and bake until spices spread the flavor. Add the oil, minced onion and bake for about 4 minutes.
Pour the lenses into the pot, pour crushed canned tomatoes and vegetable stock. When it starts to boil, cover the pot and let it cook for 15 minutes.
Blend everything with blender, put minced coriander and chickpeas. Let it boil for a minute and take it out of the fire. Serve with a greek yogurt.
